Spring Dinner

Tonight Richard came over and we cooked dinner together! We made a delicious and relatively easy meal that felt very spring-y. It was a beautiful day in California (but then again, when isn't it...) so we decided to eat outside, which was really fun.

We made our Candied Walnut, Goat Cheese, and Fruit salad that we also made last time we cooked dinner together. 

Then we had Rack of Lamb Persillade, which is a breadcrumb, parsley, and garlic mixture. It was delicious! We also made a homemade tatziki sauce to go with the lamb. We love tatziki, and I realized that I've never made it myself, so we decided to give it a try and it turned out great! The recipe is below. 



Roasted asparagus, because it is in season, and I also love asparagus, (and all roasted vegetables are delicious!)



To go with the lamb and asparagus, buttermilk mashed potatoes:


For dessert we made these 24 Hour Brown Butter Chocolate Chip Cookies again. They are so good!!!



Tatziki sauce is a yogurt sauce. It is delicious on almost all meats, as well as vegetables and bread. 

Recipe for Tatziki sauce

2 c greek yogurt
2 tbsp olive oil
1/2 lemon, juiced
1 cucumber
1 tbsp dill
2 cloves garlic
Salt
Pepper

Combine all ingredients in a food processor or blender, and pulse until smooth. Season with salt and pepper to taste. Allow to rest refrigerated for one hour, or longer.
