Pumpkin Pancakes

These pumpkin pancakes are fluffy and delicious, and perfect for a big family breakfast. If you let the batter sit for a few minutes before cooking it the pancakes will be even fluffier. Definitely serve with maple syrup as it really brings out the pumpkin taste!








Pumpkin Pancakes Recipe
Makes about 12-14 pancakes

1 3/4 cups milk
1 cup pumpkin puree
2 eggs
2 tablespoons vegetable oil
1 tsp vanilla
2 cups all purpose flour
2 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp salt

Maple syrup, butter for serving

Combine the milk, pumpkin puree, eggs, vegetable oil, and vanilla in a large bowl. In a separate bowl combine the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg, and salt. Add the dry ingredients to the wet and stir to combine.
Pour about 1/4 cup of batter onto a greased skillet or pan. Cook until both sides are browned and the inside is cooked.
Serve with maple syrup or butter, or anything you like.
